1)  Zappa - When anybody else solos its an interlude.  When Zappa solos its a lesson in music theory.

2)  Carlos Montoya - Sometimes its all about structure.

3)  BB - "Its not how many notes you can play, its how you play them" BBKing

4)  Santana - Soul and style

5)  Leo Kotke - I never knew there were that many notes in a chord.

Nr.2 : Slash
Nr.3 : Gilmour
Nr.4 : Tom Morello
Nr.5 : Jimi Hendrix

All of them are very good guitarists, specially BH. He does those "uberfretstyle" thing and taps like an god.
Slash does the classic-rock solos, also very good.
Gilmour does soft-kind relaxing solos.
Tom Morello... Yay! Very good sounds, especially in Rage Against The Machine.
And Jimi Hendrix... god now and then but i dont like him like an person more like an guitarist.

my particular favourite guitarists are Hank Marvin,Django Reinhardt,Mark Knopfler,Chet  Atkins and Julian Bream....the latter being classical,but I feel does need a mention.

I think all of the following players have redefined the guitar in their respective generations:

Charlie Christian

Les Paul

Jimi Hendrix

Jeff Beck

Stanley Jordan (everyone else is just rehashing the work of the other four)

A couple of years ago I saw Robin Trower's 60th birthday tour and he was absolutely bloody fantastic!

Still don't see it.

All I hear is a few irritating drones, a bad EQ mix, and some weird squeaks. I'm a minute and a half in. That's enough.

EDIT: When he gets in to the Bach part, it's pretty cool. Still not worth the two minutes of BS he puts us through at the beginning.

A pretty good observation, and I don't necessarily disagree because each did innovate in some way. 
Every musician builds on what went before, but not many find a fresh voice. 
For example,  Jimi bridged blues greats like Buddy Guy and Muddy Waters with R&B players like Bobby Womack and Steve Cropper.  His sound, writing, performance and presentation was absolutely original and fresh.

And Trower is great.
